KUNTHAL VARATTIYATHU / SQUID AND COCONUT MILK ROAST





How to make Kerala style Squid roast / Kunthal varattiyathu / Squid roast Kerala Style

Ingredients :

Squid : 250g, Cleaned
Onion : 1, Sliced
Ginger : 1tsp, Chopped
Garlic : 1tsp, Chopped
Tomato : 1, Chopped
Green Chilli : 1, Sliced
Turmeric Powder : 1/4tsp
Coriander Powder : 1tsp
Chilli Powder : 1tsp
Fennel Powder : 1/2tsp
Crushed Pepper Powder : 1/4tsp
Coconut Milk : 1tsp
Cury leaves : 1spring
Salt
Oil



Method :

1. Heat oil in a kadai and saute Onion till it becomes translucent. Then add ginger, garlic and green chilli to the kadhai and saute well.

2. Now add the Tomato and close the kadhai with a tight lid. after 3-4 min add chilli powder, turmeric powder, coriander powder and saute well. saute till it becomes a golden brown masala.

3. Add the squid rings and combine well with masala. Now you can add 1/2 Cup water and close the pan with tight lid. Let the squid rings cooked in it.

4. When squid rings are cooked and the water drained completely add coconut milk, fennel powder and crushed pepper powder and saute well.

5. Easy and tasty squid roast is ready to serve with hot rice, appam, bread, rice roti etc. Enjoy !!!

  13. lena, my attempts with squid has not been very successful - they end up rubbery and chewy. someone told me it is because over (or under) cooking. how much time should one cook the squid? with water and what if without water?

    sinoj. im so happy to see your comment..the best thing to make squid is , marinate it with enough chilli powder, turmeric powder and salt then pressure cook. you can wait for 2whistles. then use any recipe of squid..
