SUKHIYAN / MODAKAM


Sukhiyan is a popular Kerala tea time snack.  This is my favorite evening snack and the best one I ever tasted was from my school friend Nikhita's mom. It was just divine with a crunchy outer layer and a cardamom flavored filling. After wedding, I made it in Calicut and everyone loved it. The filling is with cooked cherupayaru / green gram, jaggery and coconut mixture. You can make this with channa daal too. 


Ingredients :

Green gram(Whole)(Cherupayar) : 1 cup
Jaggery : 6pieces or 1/2cup
Grated Coconut : 1Cup
Cardamom powder : 1/2 tsp
Ghee : 1tbsp
Oil

For the batter:

Allpurpose flour(Maida) 1cup
Salt - A pinch
Yellow food color / Turmeric powder : 1/8tsp, if required

Method :

1. Soak green gram/ cherupayaru for 6hours  or overnight. wash and pressure cook it with just enough water to cover the green gram. 

2. After the pressure releases, transfer  it in to a wide pan and add jaggery and combine well. (Proper method is to make thick jaggery syrup and add it to the green gram. I buy organic jagger, so i just add it to the green gram and mash it with my spatula.) allow to cook till it becomes a thick gravy. At this stage, add grated coconut and sit well.

3. When it starts to leave from the edges of sauce pan, add cardamom powder and ghee. Make sure that the mix is dry. Remove it from stove and leave it to cool.

4. Make small lemon sized balls from the mixture and keep aside.

5. Now make a thick batter with APF / maida, salt and required water. 

6. Dip each balls into this batter and deep fry it.Make sure that it is completely coated with the flour mixture.

7. Carefully dip it in the oil and fry to a golden brown color.

  5. Hey u know i have never tried this....But always wanted to....delaying it since my husband hates sweets and i will eat the whole myself:)....
    Is it 1 cup coconut or 1 1/2 cup..?u mentioned it twice....I will try it one day....um...
